I’m not so “hot” on sweets, and much prefer savoury foods like a fantastic Malaysian or Indian vegetarian curry with lots of fresh chili added.
Nevertheless, there is of course always a place for a good sweet to “cleanse” the palate once the savoury course has been thoroughly devoured.
Not long ago, I found a really fine little eatery near where I reside in the Philippines that sells doughnuts and also pancakes. Wow – excellent stuff!
The doughnuts are so scrumptious, and yet they only cost 5 pesos each – that’s equivalent to around 11 cents US or 7 pence UK. The pancakes are 8 pesos a pop.
I know for a fact that you cannot possibly find doughnuts or pancakes for this sort of price over in the western world, unless of course you make them at home, and even then, you’d be struggling to match the price. I think when I was a young kid, this was the sort of price tag for a doughnut or pancake when shop-purchased. That’s some 40 years ago now however.
Regardless, what with my new-found sweet palate, I thought I would try to make blueberry pancakes in my own, most limited of pantries.
After all, it’s always going to be a favourite with the kids, and I now have to think about catering to my own child’s needs – when he’s a little more mature than he currently is, as well as the potential for kiddies parties and the like. Fact is, this recipe fits well with pancakes for kids. Kids almost always love pancakes, no matter with fruit or plain, as long as they are sweet. But with fruit, it’s obviously a more healthy option.
So, that being said, today I set to work on crafting a simple recipe for blueberry pancakes.
Blueberries are not so commonly found here in the Philippines.
Nevertheless, the supermarket near to me does occasionally offer them, and today I was fortunate to get my hands on some relatively fresh ones – a small punnet as we call it in Scotland – or box if you prefer – for 160 pesos.
Not cheap! That’s around 2.40 UK pounds, or $3.70 US. It’s an indulgence, after all – not something I will be doing every day of the week for sure.
The only thing I really indulge in these days is food, which more often than not is supermarket-bought. Very, very rarely do we go out to eat, now we have little Josiah.
I’m rambling. Let’s check out the recipe for blueberry pancakes…
Note: you can use any fruit with your pancakes – bananas, apples, strawberries – you name it.
- ½ cup blueberries – either fresh (better option) or frozen then thawed
- 1¼ cup plain flour
- 1 cup milk (skimmed milk for lighter pancake)
- 1 large egg
- 1 tbsp baking powder
- 1½ tsp white sugar (use 2 tsp sugar if preferred)
- ½ tbsp butter – melted
- ½ tsp salt
- Using a large bowl, combine the flour, baking powder, sugar, salt.
- In smaller bowl, add milk and egg and beat.
- Add the milk and egg mix into flour mix and combine.
- Add in blueberries (or add blueberries once batter is placed onto frying pan).
- Lightly oil (or use butter) frying pan and warm over medium heat.
- Add around ¼ cup of batter to frying pan for each pancake and brown on both sides.
- Add maple syrup to surface of pancake if you prefer sweeter.
